Demand forecasting that feeds directly into ordering and scheduling. Waste prediction at product and daypart level. Automated exception reporting so managers see the three things that moved rather than forty that did not.
None of this requires a transformation office. Most of it can be built on the POS, labour and stock systems a business already pays for.
The prerequisite nobody sells
Every one of these use cases depends on data hygiene: consistent product hierarchies, accurate labour capture, and a single definition of a trading day across the estate.
That work is unglamorous and it is where most of the effort goes. It is also the reason two businesses can buy the same tool and get entirely different results from it.
